Most lettuces start to bolt when the temperature gets too hot(above 30-35 C OR 85-95 F). Once the plant starts sending up its seed stalk, the leaves aren’t worth eating; they become bitter and the plants will send up their flower stalks, and soon you’ll have clusters of small flowers. Once the seeds have ripened,the flower heads will become fluffy and starting to look dry, it’s time to harvest.
